Tarte Flambée

This is super quick and easy to make if you keep individual pizza crusts in the freezer!
- individual pizza crusts, pre-baked
Pizza Sauce
- 2 tbsp crème fraîche or strained Greek yogurt
- 1 pinch nutmeg
- salt and pepper to taste
Toppings
- 2 tbsp cooked bacon crumbled
- 1/4 cup caramelized onions
- 1/4 cup Gruyere or Swiss cheese shredded
Slather the crème fraîche or strained Greek yogurt onto a crust. Sprinkle on the nutmeg, salt and pepper.
Top with caramelized onions, bacon and shredded cheese.
Bake at 450 for about 8-10 minutes.
The first time you bake these, PLEASE watch them as your oven is totally different from my oven, even if they’re the same kind of oven. What cooks in 8 minutes in my oven might cook in 5 minutes (or 15 minutes!) in yours.
One thing I’ve learned after 30+ years of baking: every oven has its own personality.
